Skinny Chicken Salad

I love chicken salad, but I don’t love the calories that come with it. Recently, I’ve started substituting sour cream for plain Greek yogurt. Honestly, I can’t tell the difference between the two. When I went to make chicken salad, I discovered I was out of Mayo, but I had plain Greek yogurt in the fridge. Why couldn’t I swap out the mayo for the yogurt?!? I tried it and it was so yummy!!

Here’s my new recipe for Skinny Chicken Salad:

INGREDIENTS

  • 8-10 oz is cooked chicken breast, cooled and cubed or shredded.
  • 1/2 cup plain Greek yogurt (Add more if you like your chicken salad more creamy)
  • 1/4 cup white or yellow onion, finely chopped (add more if desired)
  • 1/4 cup chopped dill pickles (add more if desired)
  • 2 hard boiled eggs, finely chopped
  • Salt and pepper to taste
  • Bread or crackers of your choice

INSTRUCTIONS

Combine all ingredients in a bowl. With a spatula, mix together evenly and spread onto bread (cut the crusts off) is your favorite cracker.
